Spotted!


On the cover of the latest Dish magazine - the Manyana breakfast plate, with some delicious looking Mango Lassi popsicles.


Mango Lassi Popsicles

1 - 2 ripe mangoes (you need 1 1/2 cups of mango puree)
3/4 cup thick plain yoghurt
1/4 cup sour cream
1/3 cup icing sugar, sifted
Finely grated zest of 1 lime
A pinch of ground cardamom
Assorted popsicle sticks
Popsicle moulds or glasses

1. Peel & roughly chop the mango flesh. Place in a food processor & blend until smooth.
2. Pour puree into a large bowl & whisk in the remaining ingredients until smooth.
3. Pour into popsicle moulds or glasses & gently tap on the bench to remove any air bubbles. Cover each one tightly with a square of tin foil, and insert the popsicle sticks through the foil (the foil keeps the sticks upright in the centre of the glass). Freeze until frozen - approximately 6 hours.

To serve: Remove the foil. Quickly dip the popsicles into a bowl of warm water & remove from moulds.
